Mini Easter Cookie Nests

Hi friends! It’s been a minute since I’ve posted a new recipe here — life has been wonderfully full lately, and I can’t wait to catch you up on all the things very soon. But today, I had to pop in and share the cutest (and easiest) little treat we made for Easter: Mini Easter Basket Sugar Cookie Cups! 🐣🌷


This recipe comes straight from my daughter, Blair, who is in full-on “Baking with Blair” mode these days. She found these adorable cookie baskets and insisted we make them for Easter weekend — and let me tell you, they turned out so cute and so good. Soft sugar cookie cups filled with fluffy green (dye-free) frosting and topped with mini eggs? Yes please.


Whether you’re looking for an easy Easter dessert, a fun weekend project with your kids, or just something festive and sweet for spring, this one is a winner. Here’s how to make them:


Ingredients:


For the Cookie Cups:

  • 1 roll Sugar Cookie Dough (slice-and-bake kind works great!)


For the Buttercream Frosting:

  • 4 oz cream cheese, softened

  • 1–2 Tbsp milk (start with 1, add more if needed)

  • 2 cups powdered sugar

  • 1 tsp vanilla extract

  • Natural or dye-free green food coloring (for that grassy look 🌱)


Toppings:

  • Mini candy eggs


👩‍🍳 Instructions:


  1. Preheat your oven to 350°F.

  2. Grease a mini muffin tin (or a regular one for deeper baskets).

  3. Slice the cookie dough and press a piece into each muffin cup, pushing slightly up the sides to form a cup shape.

  4. Bake for 12–15 minutes, or until golden.

  5. Let them cool completely in the pan. If the centers puff up too much, gently press them down while still warm to reshape the cup.

  6. While they’re cooling, make the frosting:

    • Beat the softened cream cheese until smooth.

    • Add in the vanilla and milk.

    • Gradually mix in powdered sugar until light and creamy.

    • Add green food coloring and blend until you reach your desired shade of grass green.

  7. Spoon or pipe the frosting into each cookie cup.

  8. Top with 2–3 mini candy eggs—and voilà! Easter baskets in a bite. 🧺💚


We had so much fun making these together, and I think this will become a new Easter tradition in our house. They’re super kid-friendly and make such a sweet little centerpiece for your spring table or Easter brunch.
